At a Glance
"SoviNoa Fumé Blanc 2021" is the barrel-aged version of SoviNoa from Matijašević in Fruška Gora. In the style of Loire Fumé Blanc, the wine combines Sauvignon Blanc aromatics with smoky-mineral notes from barrel aging - a more sophisticated, complex white wine than the standard bottling.
In the Glass
Golden yellow to straw yellow; slightly more intensely colored than the base wine, clear and brilliant.
On the Nose
Gooseberry, grapefruit, and herbal aromatics meet smoky, toasted notes from barrel aging. Mineral depth and a hint of silex (flint) — typical for Fumé Blanc style.
On the Palate
Medium to full-bodied, creamy texture from wood contact. The acidity is well integrated and provides freshness. The finish is long, complex, and smoky-mineral.
Food Pairing
Pan-fried perch with herb butter, pasta with lemon cream sauce, aged goat cheese, scallops.
