Overview
Testament Merlot 2016 by Vinarija Janko is a medium-bodied, deeply structured Merlot from the Smederevsko Vinogorje region. After eight years of bottle aging, this wine shows the classic development of a mature Merlot: elegant fruit, soft tannins, and complex tertiary aromas.
In the glass
Deep ruby-garnet with already slightly brick-red reflections at the rim – characteristic of a well-aged vintage.
On the nose
Complex interplay of aromas in stages: initially plum jam, then ripe blueberries and pressed cherries, later blackberries and blackcurrants. Espresso and a hint of leather complete the aromatic profile with tertiary depth. The bouquet is multifaceted and evolving.
On the palate
Dark fruit concentration with blackberry, blackcurrant, and plum. Fine spiciness of tobacco, black tea, and barrique toast. The tannins are present and precise, the acidity keeps the wine lively. Wood is noticeable but restrained – the fruit carries the palate. Long, warm finish.
Food pairing
Roasted beef fillet, wild boar pot roast, aged Pecorino or Manchego, entrecôte with truffle butter.
